  1. Mix all ingredients except for the pork in the bottom of your crock pot.
  2. Add the pork roast, and turn to coat.
  3. Cook on low for 6 hours. Check and turn every hour.
  4. Remove meat from pot and shred.
  5. Return to pot, toss with juices, and cook for 30 more minutes.
  6. For super delicious tacos, place pork into a lightly pan fried corn tortilla. Top with queso fresco, salsa verde, cilantro, and lime. Enjoy!

Don’t have a crock pot? Or don’t have 6 hours? I have made this recipe in my enameled cast iron pot. It’s probably my favorite piece of kitchen equipment!

For this recipe adjustment, heat the pot over medium high heat, add two tablespoons olive oil.

Sear the pork until brown on all sides, then add seasonings and 1 cup of water. Reduce heat to medium low and simmer for 2 hours.
